Mine would have to be either FFVII or Ocarina of time! Let me know what you think! OoT had stunning game music for a Nintendo 64 game. Not just the music itself but the way it dynamically changed/blended based on what was going on in the game world and where you were (even what time it was). It really set an example for the rest of the video game industry to follow for decades to come! The latest Zelda title, Skyward Sword, as had pretty great music. But I was a bit sad that they didn't reproduce some of the classic Zelda tunes! Hey metts, why don't you post your demo song that you posted on Gamedev? :-)

Sure thing! soundcloud.com/mettsmusic/piano-solo-in-g-minorHope you guys enjoy! I agree about Skyward Sword! I was really excited about the fact that some of it was orchestrated as opposed to created digitally. Plus, the soundtrack that came with the game is amazing. Love the HR soundtrack as well. Also, a few more notable ones are the mgs soundtracks. Snake Eater!!!
